                Simple and sweet 


Craving something sweet? Well this is the slice for you and it is so quick and easy.

You can adapt this recipe very easy, I tend to adjust the sugar to only half  the amount of sugar in the base.



           Ingredients

  • 1 cup of plain flour
  • 1 cup of desiccated coconut
  • 1/3 cup caster sugar
  • 120g unsalted butter, Melted (You can melt it in the microwave)
  • 3/4 cup four fruits jam (use your imagination, try any flavour jam you like)
  • 1 cup icing sugar
  • 2 tablespoons cocoa powder
  • 1/3 cup shredded coconut.
  • 1 teaspoon of vanilla essence (optional)
  • 2 tablespoons of boiling water.


I'm a true believer of using what you’ve got. I don’t always have the right ingredients like caster sugar and shredded coconut, so I’ll use just plain sugar and whatever coconut I have. It still turns out great and tastes superb.


                Method

  • Preheat oven to 200° or 180° fan forced. 
  • Line base and sides of a 30x20cm slice tin (Remember use what you got)
  • In a bowl combine 1 cup of flour, 1 cup of coconut, 1/3 cup sugar and melted butter.
  • Press mixture using a fork into base of your slice tin. Bake in the oven for about 10min or until lightly golden, remove from oven and stand for 10 minutes.
  • Put the jam in a microwave proof bowl and heat for about 2 minutes or until runny. Spread the jam over the base and let set.
  • In a small bowl sift icing sugar and cocoa powder, add in the vanilla essence and boiling water (you may need to add more water small amounts at a time to get it to the right constancy). Stir until smooth.

  • carefully spread over the icing. (this bit is pretty tricky to do, try not to disturb the jam. Then sprinkle with the coconut.
  • Chill for about 4 hours.

You’ll want to eat more than one I can assure you 

 My partner and I planned our own version of “My Kitchen Rules” for our two children, who absolutely loved the whole experience.  It was the first time I had ever attempted a three course meal and I have to say it was a great success. Now all I need to do is get the courage to cook for a table of adults.
